Apple & Kale Sauté

Ingredients
- 1 bunch Kale, any variety,washed well
- 1 Apple, cored, cut in half, and thinly sliced
- 1/2 cup Yellow Onion, Chopped
- 1/4 cup Vegetable Broth
- 1 teaspoon Salt
- 1 1/2 teaspoon Balsamic Vinegar
- 2 teaspoons Olive Oil
Instructions
Prep kale by removing leaves from hard stems. Fold leaves in half and slice horizontally into thin strips. In a large pan, heat oil. When oil is hot, add onion. Cook, stirring often, until onion is translucent. Add apple and cook, stirring often, until apple is soft and lightly brown. Add kale and vegetable broth. Continue stirring until kale, apple and onion until the kale is lightly wilted. If kale is dry, add 1-2 tablespoons of water to keep it from sticking and burning. When kale is bright green and soft, remove heat and add a splash of balsamic vinegar. Mix and Serve.
