Build-Your-Own 5 minute Seasonal Slaw

Ingredients
- Slaw Base:
- Red or white cabbage, slice and cut into chunks
- Carrots, grated
- Onion, grated (use sparingly)
- Apple, grated
- Addtions (mix and match or use them all):
- Turnips, grated
- Radishes, (any variety) grated
- Beets, grated
- Fennel, sliced thin and diced, or grated
- Kohlrabi, sliced thin and diced, or grated
- Dressing:
- Extra virgin olive oil
- Apple cider vinegar (or similar light acid)
- Salt and pepper
- Honey (optional for vegans)
- Optional: grated ginger, orange or lemon zest, fennel fronds
Instructions
Combine the sliced and grated vegetables and fruit into a bowl and mix well. Dress the salad directly, your ratio will be 3 parts extra virgin olive oil to 1 and a half parts acid to 1 part honey. Taste and adjust the oil-sweet-tang balance of the dressing to your liking. If you are using optional seasonings, add them; continue tasting and adjust as needed. *Hint- sweetness cuts acid and if you over-season, you can always add more vegetables and fruit*. Scatter fennel fronds on the top of the salad and be sure to season with salt and pepper to taste.
