Celery, Apple, and Fennel Slaw

Ingredients
- 3 tablespoons extra-virgin olive oil
- 2 1/2 tablespoons apple cider vinegar
- 1 tablespoon fresh tarragon, chopped
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon sugar
- 3 celery ribs, thinly sliced diagonally
- 2 small fennel bulbs, quartered, cored, and thinly sliced, plus 1 tablespoon coarsely chopped fronds
- 1 firm crisp apple (Pink Lady, Gala, or Granny Smith), julienned
- salt & pepper, to taste
Instructions
Whisk together oil, vinegar, tarragon, lemon juice, and sugar in a small bowl. Season to taste with salt and pepper. In a large bowl combine celery, fennel, and apple. Pour enough salad dressing over to coat and gently toss. Add more dressing if needed. Garnish with fennel fronds.
