Heirloom Tomato, Totsoi & Mustard Greens Salad and Burnt Onion Mustard Vinaigrette

Ingredients
- 1/2 onion, small dice
- 2 ounces bacon, small dice
- 2 fl oz prepared mustard
- 2 fl oz sherry vinegar
- 12 fl oz salad oil
- 1/4 bunch parsley, chopped
- 1 1/2 pounds heirloom tomatoes, rough chopped
- 1/2 bunch Totsoi, cleaned and chopped
- 1/2 bunch Mustard greens, cleaned and chopped
Instructions
1. Sauté onions in 1 fl oz salad oil until thoroughly blackened. Deglaze pan with small amount of sherry vinegar.
2. Cook bacon and discard fat.
3. Combine mustard, bacon, onions, sherry vinegar, blend until smooth.
4. Working quickly, blend a steady stream of salad oil into mixture until all oil is emulsified.
5. Fold in parsley.
Combine chopped tomatoes, Totsoi and mustard greens and toss with Vinaigrette.
