Strawberry Jam

Ingredients
- 2 quarts strawberries
- 1 cup water
- ¼ - ½ cup sugar per quart (optional)
- 3 tablespoons Ball Low or No-Sugar Needed Pectin
Instructions
Sterilize jars and lids and keep warm. Wash strawberries; drain. Stem and crush strawberries; measure 5 cups. Combine strawberries, water and low or no-sugar needed pectin in a large saucepot, stirring to dissolve pectin. Bring to a boil, stirring constantly. If gel starts to form before 1 minute boil is complete, remove from heat. Ladle hot jam into hot jars, leaving ¼ inch headspace. Remove air bubbles. Wipe rim of jars, screw-on two-piece caps. Process 10 minutes in boiling-water canner with 1 inch of water above jarsYield: about 6 half-pints
