Sweet Potato & Bacon Fritters

Ingredients
- 2/3 cups milk
- 2 eggs beaten
- 2 tablespoons butter, melted
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 cups shredded raw sweet potatoes
- 4 slices bacon, cooked and crumbled
- vegetable oil
- maple syrup for dipping
Instructions
In a large bowl, whisk together the milk, eggs and butter. Add the flour, baking powder, sweet potatoes and bacon. Stir to combine.
Heat 2 inches of vegetable oil in a large, heavy bottomed pot over medium high. Test the oil by dropping a small amount of the better into the pot. If it sizzles immediately, its hot enough to cook in.
Drop the sweet potato batter by tablespoons into the hot oil. When the bottom is browned, flip and cook until the other side is golden too. Remove fritters from the pot and drain on a cooling rack or on paper towels. Serve with maple syrup for dipping.
