Apple Fritters

Ingredients
- 1 cup bread flour
- 1/2 salt
- 2 egg yokes
- 1/2 cup granulated sugar
- Finely grated zest of 1 lemon
- 1 cup hard apple cider (or apple cider)
- 1 teaspoon Vanilla extract
- 2 egg whites
- 5 tart apples, cored, peeled and sliced into rounds
- Canola oil for frying
- Bread flour for dusting
- Superfine sugar/cinnamon mixture for dusting
Instructions
1. Sift the flour and salt in a large mixing bowl and set aside.
2. Beat the egg yolks, half of sugar (¼ cup) and the lemon zest to just combine. Add the cider and vanilla. Gradually stir this mixture into the dry ingredients and mix until completely smooth. Refrigerate for thirty minutes.
3. Meanwhile, prepare the apple slices. Wash the apples, dry well, peel and core with a cylindrical corer. Slice rounds to about 1/2 inch thickness.
4. Just before the batter is to be fried, whip the egg whites with the remaining ¼ cup of sugar until stiff peaks form. Gradually fold the reserved batter into the egg whites. For best results, use the batter within thirty minutes.
5. Heat canola oil in a large Dutch oven to 375 degrees, using a thermometer to ensure accurate temperature. Take an apple slice, dredge lightly in bread flour, dip into the batter and then drop gently into hot oil. Do not over crowd the pot with apples, as this will ensure greasy product. Stir with a fork for even browning. After golden, remove, lay on paper towels to drain, dust with sugar/ cinnamon mixture and serve hot.How do you #eatdowntoearth?
