Braised Swiss Chard Frittata

Ingredients
- 1 bunch Swiss or rainbow chard
- olive oil
- 1 clove garlic, minced
- 1/3 cup red wine
- Salt and pepper
- 6 eggs, beaten
- 1 tablespoon fresh grated horseradish
- Pat of butter
- Handful of grated Gruyere or other good melting cheese
- handful of chopped nuts
Instructions
Remove stems from chard, tear leaves into small pieces and wash.
In a skillet, heat enough olive oil to just coat bottom. Add the garlic, cook one minute.
Add chard and cook 3 minutes at medium heat, stirring. Add the wine, raise heat and cook until wine is evaporated. Season with salt and pepper.
In another skillet, heat butter. Stir horseradish into eggs. Pour 1/3 of the egg into the skillet, add braised chard, then pour in remaining egg. Cook until just set, flip. Spread cheese on top, cook until slightly melted. Remove from heat, scatter nuts on top, slice and serve.How do you #eatdowntoearth?
