Broccoli Slaw

Ingredients
- 2 heads of broccoli
- 1/2 cup thinly sliced almonds, toasted
- 1/3 cup cranberries
- 1/2 small red onion, finely chopped
- Dressing:
- 3 tablespoons olive oil
- 3 tablespoons cider vinegar
- 1 tablespoon honey
- 3 tablespoons Greek yogurt
- 1 1/2 teaspoons Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon fresh black pepper
Instructions
Trim and chop broccoli (stems included) into small pieces. Toss the sliced broccoli with the almonds, cranberries, and red onion in a large bowl. Whisk the dressing ingredients in a smaller bowl and pour the dressing over the broccoli. Toss and serve. Should keep up to a week in the fridge.
