Carrot-Apple Spice Loaf

Ingredients
- 1 large egg
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1/4 cup full fat plain yogurt or sour cream
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/8 teaspoon nutmeg
- 1 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup carrot, grated
- 3/4 cup apple, grated
Instructions
Preheat oven to 350 degrees. Grease and flour an 8"x4" bread pan. Set aside.
Crack the egg into a large mixing bowl and whisk to combine. Add the sugars, yogurt, vanilla and spices and whisk to mix thoroughly. Combine the dry ingredients in a small bowl and then add to the wet mixture, stirring just to combine. Fold in the grated carrot and apple. The batter should be thick and small lumps are fine. Transfer the batter to the prepared bread pan and bake for 50 minutes to one hour, or until a cake tester inserted into the center comes out clean. If your carrot and apple are high in moisture you may need a few more minutes of cooking time. If the top of the loaf starts to over-brown during baking, tent a piece of tin foil over it after the loaf has been in the oven for 30 or 40 minutes.
Allow the loaf to cool in its pan for at least 20 minutes before turning it out on a wire rack. Serve with cream cheese or soft farmers' cheese. The loaf can be stored in the refrigerator in an air-tight container or frozen.
