Corn, Yellow Beet, Pear, Cucumber Salad with Fresh Mint Vinaigrette

Ingredients
- 1/4 cup sweet Corn Kernels
- 1/4 cup beet, finely diced
- 1/4 cup cucumber, finely diced
- 1/4 cup pear, finely diced
- 1 tablespoon Jalapeno, minced
- 1 tablespoon mint, chopped
- 1 tablespoon parsley, chopped
- 1 1/2 tablespoon lime juice
- 1/4 cup extra virgin olive oil
- sea salt & freshly milled black pepper
Instructions
Vinaigrette: Whisk together lime juice, oil, salt & pepper to taste. Stir in jalapeno and herbs.
Salad: In a bowl combine corn, beet, cucumber & pear.
