Cucumber Sandwiches with Strawberries & Watercress

Ingredients
- 8 large strawberries
- 4 ounces McGrath Cheese Co Fresco, cream cheese, goat cheese, or Neufchatel
- 1 tablespoon fresh mint, chopped
- 1 teaspoon lemon zest
- 1 1/2 cups tender, small leaf greens (watercress, arugula, baby spinach)
- 1/2 cucumber, thinly sliced
- 8 slices sandwich bread
Instructions
Chop 4 strawberries and slice remaining 4. In a medium bowl, mash chopped strawberries with a fork. Add cheese, mint, and zest and mix until well combined. Spread strawberry mixture evenly between slices of bread. Arrange cucumbers, sliced berries, and greens over half of the slices. Top with remaining bread slices to form sandwiches, then cut in half or quarters and serve.
