Honey Mousse

Ingredients
- 4 egg yolkes
- 1/4 cup honey
- 2 cups heavy cream, divided
- 1 teaspoon vanilla extract
- 1 ounce semisweet chocolate, roughly grated, plus extra garnish
Instructions
Beat egg yolks until thick and foamy. With a wooden spoon, stir in honey, 1 cup cream and the vanilla extract. Place mixture in a metal bowl over a pot of simmering water, and whisk continuously until it thickens (5 to 10 minutes). Remove from heat, and let cool.
Whip remaining cream until it forms stiff peaks, and fold into honey mixture along with grated chocolate. Refrigerate for 2 to 3 hours. Garnish with shaved chocolate and serve.
