Mache Salad with Honey Lemon Dressing

Ingredients
- 1 tablespoon honey
- juice of half of lemon
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
- salt & pepper to taste
- 6 ounces mache
- 4 wedges of Rainbeau Ridge MontVivant (or other goat cheese)
Instructions
In a bowl or clean, empty jar with a lid, combine the honey and lemon juice by whisking or shaking until thoroughly blended. Add the vinegar and mix well. Add the oil and mix until the dressing has a creamy appearance.
Toss the mache with desired amount of dressing and arrange the mache on the plate. Salt & pepper to taste. Place wedges of the cheese decoratively.
