Olive Oil Pickles

Ingredients
- 10 fresh Cucumbers about 4” long
- 2 medium onions
- 1/2 cup salt
- vinegar
- olive oil
- 2 tablespoons celery seed
- 1 tablespoon mustard powder
Instructions
Wash the cucumbers and cut into thins slices. Peel and slice the onion and mix with the cucumbers. Sprinkle with salt, mix and let stand overnight. In morning, drain and rinse cucumber onion mixture. Add vinegar, enough to just cover vegetables, let stand 1 - 4 hours. Drain & measure vinegar, and put in a kettle. For every cup of vinegar, add 2 tablespoons of olive oil. Mix in the Celery seed and mustard powder. Bring brine mixture to a boil and add to jar with cucumber and onion mixture. Let stand 1 week before using.How do you #eatdowntoearth?
