Roasted Butternut Squash Mash

Ingredients
- 2 large butternut squash, peeled, seeded and cut into 1 inch dice
- olive oil
- salt and pepper
- butter
- Cream or milk, heated
Instructions
Pre-heat oven to 375 degrees. Place squash on a sheet pan lined with parchment paper and drizzle some oil. Add Salt and Pepper to taste and toss to coat.
Place squash in oven. Roast until squash is soft and lightly caramelized, about 30 minutes.
Transfer squash to a large saucepan. Add butter to taste and start mashing. Add a little cream or milk and keep mashing. Do this until the desired consistency. Season with salt and pepper.
To serve, place squash mash in a casserole
Optional:
You may add Parmesan or goat cheese, chopped pecans or caramelized onions.
