Savory Sauteed Apples

Ingredients
- 1 large yellow onion
- 4 medium sweet, crisp apples, such as fuji
- 2 cloves garlic
- 3 sprigs thyme
- 1 sprig rosemary
- 1 tablespoon lemon juice
- salt and pepper to taste
- 4 ounces sharp cheddar cheese
Instructions
Peel and thinly slice onion. Peel and cut apples into 1/2 inch slices. Mince garlic, thyme, and rosemary. Heat olive oil in a large saute pan over high heat. Add onions and cook until they begin to soften. Add apples, garlic, rosemary, and thyme, and cook for 5-8 minutes, until the apples and onions are nicely browned. Remove from heat and season with lemon juice, salt, and pepper. Top with cheese.
