Spinach Quinoa Bowl

Ingredients
- 1 cup tri-color quinoa
- Kosher salt
- Extra virgin olive oil
- Ground black pepper
- 1 small red onion (about 1 cup) 1/4" diced
- 4-5 garlic cloves, minced
- 16 ounces spinach
- Zest and juice of 1 lemon
Instructions
In a small pot bring 2 cups of water, with 2 teaspoons of salt to boil. Add quinoa, reduce to a simmer and cover. Set timer for 15 minutes. After time, turn off heat, keep pot covered. After 5 minutes, remove lid and fluff. Add oil to a saute pan and cook the onion and garlic, with a good pinch of salt and pepper.Once caramelized add spinach and 1/4 cup of water to loosen up the bits. Season with a pinch of salt and pepper and saute until wilted. Add quinoa, lemon zest, and juice. Toss to combine. Add a little more olive oil and seasoning as needed. Serve warm or room temperature.
Cook's note: Consider adding a protein such as seared scallops; just sear in oil before cooking spinach.
