Warm Cabbage & Apple Salad

Ingredients
- 1 head red cabbage
- olive oil
- 1 tablespoon butter
- salt and pepper
- 1 apple, peeled and sliced
- 3 teaspoons seedless raspberry preserves
- 3 tablespoons raspberry vinegar
- juice of one lime
- 1/4 cup walnut oil
- Chopped nuts for garnish
Instructions
Peel outer leaves of cabbage, then slice head to desired size pieces. Heat a skillet and coat lightly with olive oil, then add butter. Cook cabbage about 5 minutes, season with salt and pepper, then add apples. Meanwhile, combine all ingredients for vinaigrette and whisk well. After apples have cooked for 3 minutes, pour the skillet out into a serving dish, spoon over vinaigrette and top with nuts.
