Winter Farmers’ Market Omelet

Ingredients
- 3 eggs
- 1 tablespoon grated cheese
- 2 tablespoons sliced mushrooms
- 1 tablespoon chopped onion
- 1 chopped kale leaf
- 2 tablespoons olive oil
- pinch salt and pepper
Instructions
Blanch and shock kale. Warm olive oil in sauté pan. Add onion. Cook until translucent. Add mushrooms. Sautee over medium heat for five minutes then add kale and sauté for one more minute. Remove to bowl. Rinse pan and reheat.Make omelet. Spoon in filling and cheese and fold over. Slide out onto plate and serve.
This recipe can be used with any vegetables available at the market.
