Applesauce

Ingredients
- 4-5 medium apples
- 1/2 cup water
- 2-3 teaspoons sugar to taste
- 1 teaspoon cinnamon to taste
Instructions
Peel, core and slice apples. Place in 2 quart saucepan, add water, sugar and cinnamon. Simmer over low heat until apples are tender, stirring frequently. Optional: puree sauce with an immersion blender, food mill, or food processor for a more consistent texture. Serve warm or cold.
Excellent apples for applesauce include: Akane, Cameo, Cortland, Fuji, Gala, Golden Delicious, Granny Smith, Honey Crisp, Jonagold, Jonalicious, Jonathan and Melrose. Good choices include: Braeburn, Empire, Ginger Gold, Lodi, McIntosh, Newton Pippin, Pink Lady, Red Delicious, Spartan Stayman, and Winesap.
