BBQ Chickpea Sandwich

Ingredients
- 2 cups cooked chickpeas
- 1/2 cup barbecue sauce
- 1/2 cabbage
- 2 large carrots
- 6 radishes
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 2 teaspoons sugar
- salt and pepper
- pitas or burger buns
Instructions
Combine the chickpeas and barbecue sauce in a saucepan and cook over medium heat until the sauce is reduced and coats the chickpeas. Set aside.
Finely grate or shred the vegetables. Mix them together in a large bowl. Whisk together the vinegar, oil and sugar and then toss with the shredded vegetables. Season to taste with salt and pepper. This slaw can be made ahead and kept in a jar in the refrigerator. Shake gently to redistribute the dressing before serving.
Depending on how many sandwiches you will be making, set out half pitas or burger buns on a platter. Add a generous scoop of seasoned chick peas and then top with slaw. The chickpeas and slaw also work well on top of rice or salad greens.
