Bourbon (Or Not) Peach Smash

Ingredients
- 1 large ripe peach
- 1/2 cup sugar
- 1/2 cup water
- 1 tablespoon apple cider vinegar (or up to 2 tbsp to taste)
- pinch of salt
- fresh mint leaves
- ice
- 1 1/2 ounces bourbon for each cocktail you are making
- splash of chilled seltzer or ginger beer
Instructions
This cocktail can be made non-alcoholic by replacing the bourbon with ginger beer.
Do ahead: Pit and thinly slice the peach then place in a jar. Cover with sugar, water, vinegar and salt. Place the lid on the jar, give it a gentle shake to mix, and then chill in the refrigerator for three hours or up to a week.
To make the cocktail: For each cocktail you will be making, remove a few slices of peach from the jar and place in the bottom of a glass. Add three or four mint leaves to each glass and use a spoon or muddling stick to mash the peach and mint into smaller pieces. Add 1 1/2 ounces of bourbon and two tablespoons of syrup from the peach jar to each glass and stir. Add ice cubes to each glass and top-off with seltzer or ginger beer.
