Carrot Pie

Ingredients
- 2 cups carrots, shredded
- 4 eggs*
- 1/4 cup low-fat milk
- 1 tablespoons onion, minced
- 1/8 teaspoon pepper
- 1/2 cup cheese, shredded
- 1/2 teaspoon garlic powder
Instructions
Preheat oven to 350 degrees. Cook carrots in just enough water to cover for five minutes and drain well. Beat together eggs, milk, onion, garlic powder and pepper. Stir in carrots and cheese. Pour into a greased 9-inch pie pan. Bake for 30-35 minutes, or until knife inserted into the center comes out clean.
*To reduce fat, use 2 egg whites instead of 1 egg.
