Chimichuri

Ingredients
- 1 cup mild olive oil
- 1/3 cup lemon juice
- 1 cup fresh parsley, chopped
- 1/3 cup fresh cilantro, chopped
- 1 tablespoon dry oregano
- 2 tablespoons garlic, minced
- 1 tablespoon red crushed pepper
- salt to taste
Instructions
In a mixing bowl add all the ingredients and stir, let it rest for at least 30 minutes.
To be used as a wonderful accompaniment with beef.
Can be kept in the refrigerator for 1 week in a glass container.
