Corn and Avocado Relish

Ingredients
- 1 cup corn, cut from 2 ears
- 1 avocado, peeled and diced
- 1/4 cup red onion, diced
- 1 serrano pepper, seeded and diced
- 8 fresh basil leaves, rolled and cut into chiffonade
- 1 lime
- 1 tablespoon olive oil
- sea salt, as needed
- black pepper, as needed
Instructions
Combine the corn, avocado, onion, pepper, and basil. Squeeze in a couple tablespoons of lime juice and season with salt and pepper.
Adjust seasoning with more lime juice, salt, and pepper, until the relish has a balance of sweetness from the corn, spiciness from the pepper, and tartness from the lime juice.
