Creamy Corn Soup

Ingredients
- 4 cups corn
- 1 garlic clove, chopped
- 2 tablespoons olive oil
- 4 scallions, sliced
- Salt and black pepper to taste
Instructions
Puree corn kernels and garlic with 3 cups of water until chunky. Heat the oil in a large pot over medium heat and add the corn mixture. Add 1 more cup of water and stir well. Cook until the soup is heated, about 5 minutes. Remove from heat and add scallions, salt and pepper. Serve and enjoy!
