Daikon Radish with Carrot

Ingredients
- 1 medium daikon radish
- 1 medium carrot
- 2 tablespoons mild oil (olive or a neutral vegetable oil)
- 1 tablespoon sesame oil
- 2 tablespoons rice wine vinegar
- 2 tablespoons fresh cilantro, chopped
- salt and pepper to taste
Instructions
Wash and peel daikon radish and carrot and then either cut them into thin matchsticks or use a mandolin or spiralizer to cut them into thin threads. Place the daikon radish and carrot into a steamer basket over boiling water and steam 3-5 minutes, until the vegetables are crisp-tender but not mushy. If the vegetables are cut into larger matchsticks, they may require more time to cook.
Meanwhile, whisk together the oils, vinegar, cilantro, salt and pepper or combine them in a small jar and shake well.
Remove the steamed vegetables from the steamer basket and put them in a medium-sized bowl with the dressing, tossing to coat the strands well.
Serve atop sandwiches or a rice bowl as an Asian slaw or as a side to fish or chicken.
