Glazed Beets and Greens

Ingredients
- 1 onion, sliced
- 5 beets and greens, chopped
- 3 tablespoons balsamic vinegar
- 3 tablespoons vegetable oil
- Salt and black pepper to taste
Instructions
In a large pot over high heat, add onions, beets, vinegar, and oil. Cover vegetables with 1 cup of water and bring to a boil. Reduce heat to low and simmer for 15 minutes or until beets are soft. Add the greens and cook for 5 more minutes. Season with salt and pepper. Serve and enjoy!
