Grilled Broccolini
Serves: 4 – 6 • Course: Side Dishes • Diet: Vegan • Season(s): Spring, Summer
Ingredients
- 1 large bunch broccolini
- 2 tablespoons olive oil
- red pepper flakes
- salt to taste
- herbs or spices if desired
- 1/2 lemon or lime
Instructions
Preheat the grill to medium-high heat (you can use a broiler if you don't have a grill available).
Toss the broccolini with olive oil, pepper flakes and salt. From here you can season the vegetable any way you like, with half a teaspoon each of thyme and rosemary for example or 1/2 a teaspoon of chili powder and 1/4 teaspoon of cumin for a southwestern flavor. Or you can keep it simple with just the salt and pepper flakes. Make sure each stalk of broccolini is well coated with oil and seasonings.
Spread the broccolini in an even layer on a sheet tray or grilling pan. Place on the grill and cook, turning at least once half way through, for 8 minutes or until tender and slightly charred. Transfer to a serving plate and squeeze lemon or lime over the top.
