Harvest Peppers

Ingredients
- 6 medium sized green bell peppers
- large pot of boiling water
- 3 cups corn kernels
- 2 cups cooked dried beans
- 3/4 cup shredded cheese
- 1 small onion, minced
- 1 large clove garlic, minced
- 1/8 teaspoon cayenne pepper
- 1 tablespoon olive or cooking oil
- black pepper to taste
Instructions
Preheat oven to 375 degrees. Cut off pepper tops, remove seeds. Put peppers in the boiling water and cook them for 5 minutes. Remove the peppers carefully, place them upside down to drain. Combine the remaining ingredients, stuff the cooled peppers with the filling. Stand the stuffed peppers in a baking dish, pour a little water into the dish. Do not cover. Bake for about 20 minutes.
