Italian Popcorn

Ingredients
- 1/4 cup canola oil
- 2/3 cup popcorn kernels
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning blend
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon salt
Instructions
Put the canola oil and three kernels of popcorn into a dutch oven or other large pot with a lid. Place the covered pot on medium-high heat and listen for all three kernels to pop. Move the pot off the heat and removed the three popped kernels. Pour the rest of the popcorn kernels into the pot, put the lid on, and move it back onto the heat. Keeping the lid tightly closed, shake the pot occasionally as the popcorn pops. After about two minutes, or when the popping has slowed down, take the pot off the heat and remove the lid. Pour the olive oil* over the popcorn and toss well to coat. Add the Italian seasoning, Parmesan and salt and mix well. Serve warm.
Popcorn can be kept in a sealed container for two days.
*A flavor infused olive oil would work well too, but you will want to reduce the amount of Italian seasoning blend you use.
