Kale & Grain Stuffed Delicata Squash

Ingredients
- 2 delicata squashes, halved & deseeded
- 1 cup cooked grain (eg, quinoa, rice, farro)
- 1 bunch kale, de-stemmed and chopped
- 5 ounces mushrooms, chopped
- 1 small onion, peeled & chopped
- 2 cloves garlic, peeled and crushed
- salt and pepper
- 1/3 cup grated Parmesan cheese OR
- 2 tablespoons tahini and
- 2 tablespoons olive oil
Instructions
Preheat oven to 425° F.
Rub cut squash with olive oil, salt and pepper. Place in a shallow baking dish and bake in the oven for 30-35 minutes or until squash is soft when poked with a fork.
While squash is baking, heat two teaspoons of olive oil in a saute pan. Cook the chopped onion until it's translucent then add the garlic, kale and mushrooms and cook, stirring, until the vegetables are tender.
Mix the cooked vegetables with the cooked grain and season to taste with salt and pepper.
When the squash is cooked, remove it from the oven and fill each half with the vegetable-grain mixture.
> If you are using cheese, top each squash half with Parmesan and return the dish to the oven for three minutes or until the cheese has melted. Serve.
>If you are not using cheese, whisk together the tahini and olive oil with salt and pepper to taste and drizzle the mixture over the stuffed squash. Serve.
