Kale Chips

Ingredients
- 1 large bunch of kale, tough stems removed
- 1 tablespoons olive or vegetable oil
- 1/4 teaspoon salt
Instructions
Preheat oven to 400 degrees. Put oven racks in the middle and above. Tear kale into chunks, makes about 16 cups. Rinse then dry the kale. In a large bowl, drizzle oil and sprinkle the salt over the kale mix in with your hands until the leaves are evenly coated. Spread the leaves evenly over two or more cookie sheets. Do not overlap the leaves. Bake kale in batches if necessary. Bake for 9-12 minutes or until the leaves have become deep green and dry looking. Serve immediately or store in an airtight container for up to two days.
