Roasted Beets

Ingredients
- 1 Bunch of Beets with Greens
- Olive oil
- Salt
- Pepper
Instructions
Preheat oven to 350 degrees. Remove beet tops and remove leaves from the stems. Roughly chop and reserve leaves. Discard stems. Peel the beets and cut into 1/4 inch dice. In a pan with lid large enough to hold diced beets in 1 layer, place beets in pan, drizzle with olive oil, season with a good pinch of salt and pepper then toss to coat. Cover pan with beets and place in 350 degree oven. Roast beets for about 30 minutes or until tender. When beets are done transfer pan to the stove top without heat. Remove lid and stir in the beet greens. The residual heat from the beets and pan will wilt the greens. Drizzle some fresh olive oil over beets and adjust seasoning with salt and pepper. Serve at room temperature.
Tip: Check the beets once in a while to monitor their progress and give the pan a shake so they don't stick. Don't forget to use an oven mitt.
