Shallot and Ginger Green Beans

Ingredients
- 1 tablespoon butter or olive oil
- 2 medium shallots, peeled and sliced into thin rings
- 1 teaspoon grated fresh ginger
- 2 pounds green beans, trimmed and cut into 1 1/2 inch pieces
- 1/2 teaspoon fresh thyme leaves
- 1 cup water
- Salt and pepper to taste
- 3/4 cup roughly chopped toasted almonds
Instructions
Heat butter or olive oil in a large skillet. Add shallots and cook until translucent. Add ginger and heat five minutes. Toss in green beans and cook 5 minutes. Add thyme and water, lower heat and cover. Steam until green beans are bright and green and tender but still with a crunchy toothsome-ness. Salt and pepper to taste. Transfer beans to a serving dish, top with chopped almonds.
