Strawberry Sorbet

Ingredients
- 2 1/2 pounds strawberries
- 1 cup sugar
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
Instructions
You will need a blender and ice cream churn for this recipe.
Remove the tops from the strawberries and purée in a blender or food processor until smooth. You should end up with 1 quart of purée. Add the sugar and blend again for 30 seconds. Add the lemon juice and salt, blend to incorporate, and then adjust to taste. Strain the purée and transfer it to the refrigerator; chill for 2 to 3 hours until very cold. Churn mixture in an ice cream maker according to the manufacturer's instructions then transfer the sorbet to the freezer to firm up for 2 to 3 hours before serving.
