Watermelon-Basil Shrub

Ingredients
- 6 cups watermelon, cubed without rind
- 1 large bunch basil, chopped
- 1/2 cup honey
- 1/2 cup white balsamic vinegar
- seltzer or sparkling water
- ice for serving
Instructions
Combine the watermelon, basil and honey in a large bowl or jar, pressing to crush the fruit. Cover tightly and leave in the refrigerator for 2-3 days to macerate.
Pour macerated mixture into blender and process until smooth. Place cheesecloth or a clean tea towel in a sieve and pour the mixture through to remove seeds and pulp. This should leave you with 2 1/2 to 3 cups of juice. Stir in the vinegar.
Fill serving glasses with ice and add 1/4 to 1/2 cup of shrub to each glass, then top with sparkling water. Serve with a wedge of lime or a sprig of fresh basil for decoration.
