Wild Rice Medley

Ingredients
- 6 cups cooked wild rice blend, cooked to package directions
- 4 Celery ribs, small dice
- 1 large yellow onion, small dice
- 1 cup cup of dried cranberries, dried cherries or golden raisins (your choice or all)
- 1/2 cup cup of roasted shelled pumpkin seeds
- Butter or olive oil
- Salt and pepper
- 1 tablespoon each of your choice of herbs, such as thyme, parsley and sage
Instructions
In a pan large enough to hold all the ingredients…over medium high heat, heat butter or oil. Add celery and onion and sauté until soft and translucent. Remove from heat. Add your dried fruit, pumpkin seeds and herbs.
Add the cooked wild rice blend, salt and pepper to taste and fold everything together.
Transfer to a casserole and reheat until the top gets a little crusty. Serve.
