Apple-Bacon-Cheese Sandwich

Ingredients
- 1 baguette
- 2 bacon slices per sandwich
- 4 apple slices per sandwich
- McGrath Cheese Co. Rascal raw cows' milk cheese, sliced
- honey mustard
- salt and pepper to taste
Instructions
Cut a 6-inch piece from the baguette for each sandwich you will be making. Slice open each baguette portion. Set aside.
Cover a small cooling rack with paper towel. Cook the bacon in a frying pan until crispy and then put it on the cooling rack so that the paper towel absorbs any extra fat and the bacon comes to room temperature.
Fill each baguette portion with bacon, apple slices and slices of cheese. Spread the baguette with honey mustard to taste. Add salt and pepper to taste. The sandwiches can be served room temperature, warmed slightly in the oven, or hot out of a sandwich press.
