Braised Red Cabbage

Ingredients
- 1 large head red cabbage, cored and shredded
- 1 large onion, thinly sliced
- 2 large Granny Smith apples, peeled, cored, and diced small
- 1 tablespoon Juniper Berries
- 3 tablespoons butter
- 1 cup apple cider
- 1/4 cup apple cider vinegar
- 2 large bay leaves
- 8 whole cloves
- salt and pepper to taste
Instructions
Heat the butter in a large saute pan over medium high heat. Add the apples, onions, and a little salt and pepper. Saute until translucent and turning golden. Do not burn, adjust heat as needed. Add the red cabbage, juniper berries, bay leaves, and cloves, and stir to blend with the apples and onions. Add a little more salt and pepper. Add the apple cider and cover the pan. Bring to a simmer and cook for about 45-60 minutes until the cabbage is very tender. You can also do this step in a 325 degree oven to prevent scorching the pan. When done, if there is too much liquid, cook a little more with the lid off to reduce the liquid. Season to taste and serve.
