Ingredients
- 1 cup diced ripe fresh tomatoes, seeds removed
- 1/3 cup white onion, diced
- 1/3 cup red bell pepper, diced
- 1/2 cup vegetable oil
- 1/3 cup white vinegar
- 1/3 cup water
- 1/3 cup tomato juice
- 3 tablespoons fresh parsley, chopped
- 1/3 cup yellow bell pepper, diced
- A pinch of dry oregano
- Salt to taste
Instructions
Mix all the ingredients, let to rest for at least 30 minutes in the refrigeratorCan be served over steak, chicken or fish.
