Eggplant Casserole

Ingredients
- 1 large eggplant
- 1/2 pound sliced mushrooms
- 1 1/2 cup tomato sauce
- 1/2 cup bread crumbs
- 1/2 cup Parmesan cheese, grated
Instructions
Preheat oven to 350 degrees. Place eggplant in a large pot of boiling water. Reduce heat and simmer for 10 minutes. Drain and cool. Cut into 1 inch pieces. Place in a greased casserole dish with mushrooms and tomato sauce. Combine Bread crumbs and cheese. Sprinkle on top of the casserole. Bake for 40 minutes.
