Farmers Market Omelet

Ingredients
- 3 eggs
- 1 tablespoon grated cheese
- 2 tablespoons medium diced summer squash
- 1 tablespoon chopped tomato
- 1 tablespoon sliced spring onion
- 1 tablespoon sliced carrots
- 1 tablespoon sliced radish
- 2 tablespoons olive oil
- pinch salt & pepper
Instructions
Warm olive oil in sauté pan. Add spring onion. Cook one minute. Add all ingredients except tomato and cheese. Sautee over medium heat for five minutes (no color on veg – don’t brown). Add tomato and cook one minute more. Remove to bowl. Rinse pan and reheat.Make omelet. Spoon in filling and cheese and fold over. Slide out onto plate and serve.
