Heirloom Tomato and melon Salad with Vinaigrette

Ingredients
- Salad:
- 3 fresh heirloom tomatoes, sliced
- 1/4 cup cantaloupe, balled
- 1/4 cup honeydew melon, balled
- 3 ounce Mozzarella cheese (optional)
- Vinaigrette:
- 1/2 bunch parsley, minced
- 1/2 bunch mint, minced
- 1/2 cup pistachios, chopped
- 1 cup olive oil
- 1/3 cup sherry vinegar
- Salt and Pepper to taste
Instructions
Combine tomatoes, cantaloupe, honeydew melon and mozzarella cheese in a large bowl. Mix all the vinaigrette ingredients together. Toss salad with 2 tablespoons of vinaigrette and serve.
