Non-Fried Fried Rice

Ingredients
- 1 cup sea or bay scallops (or shrimp)
- 2 cups steamed or cooked rice
- 1 teaspoon oil
- 1 cup tempeh, cubed (optional)
- 1/2 cup zucchini, diced
- 1/4 cup scallions, diced
- 1/4 cup carrots, diced
- 1/4 cup mushrooms, sliced (optional)
- 1/2 cup pineapple, diced (optional)
- 1 egg
- 2 tablespoons garlic powder
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- seasonal vegetables or herbs for garnish
Instructions
steam all the vegetables for a few minutes until they are al dente. Steam scallops and/or shrimp until cooked. Saute tempeh with a little bit of olive oil and soy sauce. Mix vegetables, seafood, tempeh and rice together in a bowl. Add soy sauce and garlic powder.fry an egg and put it on top of the bowl. Garnish with seasonal vegetables or herbs such as carrots, cucumbers, tomatoes, and parsely.
