Oriental Cabbage Salad

Ingredients
- 6 inner stalks bok choy, washed and thinly sliced
- 2 cups thinly sliced Chinese Cabbage
- 1 cup thinly shredded red cabbage
- 1 medium carrot, julienned or coarsely grated
- 3 scallions, greens included, thinly sliced
- 1/4 cup minced parsley or cilantro
- 3 tablespoons walnut oil
- 2 tablespoons rice vinegar
- 1 tablespoon mirin or sherry
- 2 teaspoons toasted sesame oil
- 1/2 teaspoon soy sauce
- Pinch of sea salt
- 1/2 teaspoon dry mustard
- 1 teaspoon toasted sesame seeds
Instructions
Place bok choy, Chinese Cabbage, red cabbage, carrot, scallions, and parsley or cilantro in a large mixing bowl.In a small bowl whisk together dressing ingredients. Pour over the vegetables and toss to combine.Serve garnished with toasted sesame seeds.
