Parmesan Summer Squash Snacks

Ingredients
- 4 medium summer squash, sliced into 1/4 inch rounds
- 1/4 cup olive oil
- salt
- pepper
- red pepper flakes
- 1 cup panko bread crumbs
- 1 cup grated Parmesan
- 2 tablespoons fresh parsley, chopped
- 1 large clove of garlic, minced
Instructions
Preheat oven to 400° and line a baking sheet with parchment paper. In a large bowl toss together squash with olive oil until squash is well coated. Season generously with salt, pepper, and a pinch of red pepper flakes.
In a shallow bowl mix together panko, Parmesan, parsley and garlic. One at a time dip squash rounds into mixture, pressing to coat each side, then placing the squash on the prepared baking sheet. Bake 30 minutes, or until golden and crispy, flipping halfway through. Serve warm as a snack or side dish.
