Poached Quince

Ingredients
- 4-6 Quince
- 1/2 bottle white wine
- ½ -¾ cup of sugar
- 4 sprigs thyme
- 3 whole cloves
- Crème Fraiche (for serving)
Instructions
Heat wine and dissolve sugar. Add thyme and cloves. Peel quarter and core quince. Place in liquid immediately to avoid oxidation. Cut parchment paper disk to cover quince. Bring liquid to a boil then reduce to low simmer.
Simmer 30 to 45 minutes or until quince is soft. Reduce liquid to syrup and serve over quince and crème fraiche.
