Roasted Jerusalem Artichokes

Ingredients
- 1 pound Jerusalem artichokes (aka sunchokes)
- 1/4 cup olive oil
- 2 tablespoons dried thyme
- 1 tablespoon chopped garlic
- salt and black pepper to taste
Instructions
Preheat the oven to 350 degrees. Wash and scrub the Jerusalem artichokes. Use a paring knife to trim off any rough spots or long roots and then cut the Jerusalem artichokes into one inch pieces. Toss them with the remaining ingredients, transfer to a roasting pan and roast in the preheated oven until tender, 30-45 minutes.
